When tools cross age groups

In a public answer updated on 4 June 2026, the US Food Safety and Inspection Service addresses plants that do not segregate cattle aged 30 months or older from younger cattle. Under the cited rule, equipment used to cut through specified risk material in the older group must be cleaned and sanitized before it is used on younger carcasses or parts.

Cleaning and sanitizing step

FSIS says visible debris is removed before food-contact surfaces, including splitting saws and knives, are sanitized with 180°F water or a chemical equivalent. The step applies even when no intact or identifiable specified risk material is visible on the tool.
